My wife likes to joke that I lured her in with my cooking. At least, I think she is joking. I use to cook quite often. But a promotion last year ate up a lot of free time (which led to eating out more often). This happened right before we got married. Smoked Chicken

We use to grab rotisserie chickens quite often, but have been buying whole chickens and cooking them in the Instapot mostly lately. We are able to get more meat that way, generally. But, I was able to get off work a little early and decided to smoke the one we grabbed this weekend. It was on the smaller side, and only took 2 1/2 hours to get to 165 degrees. Smoked Brats, Ribeyes

Fired up the smoker tonight to cook some homemade brats and went ahead and cooked a couple ribeyes as well. Brats will be for later in the week, as the ribeyes were for tonight. Smoked the steak to 130, and then finished them off by searing them in bacon grease in the cast iron. I’m normally a simple S&P man for my steaks, but went a little different for these, using a grill rub from a chocolate place in St. Louis. Concert Review: American Aquarium

American Aquarium returned to Off Broadway in St. Louis Monday night. Being a school night, the show did not sell out, but the room was full, and the energy on the stage was still high. A few years ago, I made the prediction lead singer BJ Barham was about to “Isbell the shit out of sobriety”. He just celebrated five years sober recently. And I am happy to report I was not wrong.
