Fired up the smoker tonight to cook some homemade brats and went ahead and cooked a couple ribeyes as well. Brats will be for later in the week, as the ribeyes were for tonight.
Smoked the steak to 130, and then finished them off by searing them in bacon grease in the cast iron.
I’m normally a simple S&P man for my steaks, but went a little different for these, using a grill rub from a chocolate place in St. Louis.
Finished it all off with corn on the cob, mashed cauliflower and a glass of whiskey from a bottle that was a wedding present last year.
